Gail’s Bakery has applied for permission to open at the former Paperchase in Cambridge city centre. The stationery company went into administration earlier this year. The brand was bought by Tesco, but that did not save its stores. Gail’s application to convert it to a bakery says “minimal” changes are needed to the shop front. The company, which opened its first bakery in London in 2005, already has a shop at The Grafton centre and one at Cambridge station.
